Peanut Butter Cup Cookies

One bowl, 10 ingredients, and only a few minutes to spare these Peanut Butter Cup Cookies are easy, simple, and the right balance of salty and sweet. There’s absolutely nothing not to love!

Ingredients:

  • 1/2 cup unsalted butter, melted

  • 1/2 cup granulated sugar

  • 1/4 cup light brown sugar

  • 1 large egg

  • 1 egg yolk

  • 1/2 cup cocoa powder

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/4 cup chocolate chips, or chunks

  • 12 mini Peanut Butter Cups

FOR THE COOKIES:

START by preheating your oven to 350°F and line a baking sheet with parchment paper

INTO a large mixing bowl add melted butter both sugars and whisk to combine for about one minute. Once combined, add in whole egg plus egg yolk and vanilla. Lastly, add in flour, cocoa powder, baking powder, and salt and mix until just combined.

USING a 2-inch cookie scoop portion evenly into 12 balls. Flatten the portions and wrap around a peanut butter cup, place on prepared parchment, and carefully push down, only a teensy bit, to flatten the dough ball.

BAKE for 9-10 minutes or until they’ve gone from a shiny to a matte finish. Store at room temp covered for up to 1-week, but trust me they won’t last that long ;)
