Peanut Butter Brookies

A brookie is a brownie chocolate chip cookie hybrid, but it’s time to take it to the next level- Peanut Butter Brookies. An ultra tender peanut butter cookie prepared alongside a fudgy brownie. Guaranteed to satisfy any peanut butter chocolate craving you might have.

Peanut Butter Brookies

Cook time: 30 minutes

 Ingredients:

For the brownie:

  • ¼ cup unsalted butter

  • 1/3 cup sugar

  • 1/3 cup packed brown sugar

  • 1 egg

  • 1 teaspoon vanilla

  • ½ cup all-purpose flour

  • ¼ cup dark cocoa powder

  • 1/4 teaspoon salt

  • ½ cup semisweet chocolate chips

    For the peanut butter cookie:

  • 6 tablespoons unsalted butter

  • ½ cup peanut butter

  • 1/3 cup brown sugar

  • 1/3 cup sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1 cup all-purpose flour

  • ¼ teaspoon baking soda

  • ½ teaspoon baking powder

  • ¾ teaspoon salt

FOR THE BROWNIE PORTION:

PREHEAT oven to 350 degrees Fahrenheit and prepare a 9x9 inch baking pan with non-stick spray.

COMBINE into a bowl melted butter and sugars (¼ cup unsalted butter 1/3 cup sugar, 1/3 cup packed brown sugar) till combined.

THEN add in egg and vanilla, once combined stir in dry ingredients and chocolate chips (1 egg, 1 teaspoon vanilla, ½ cup all-purpose flour, ¼ cup dark cocoa powder, 1/4 teaspoon salt, ½ cup semisweet chocolate chips). Congrats you just made brownies, set aside.

FOR THE PEANUT BUTTER COOKIE PORTION:

INTO a separate bowl combine melted butter and peanut butter (6 tablespoons unsalted butter, ½ cup peanut butter) then stir till combined. Once combined, add in sugars (1/3 cup brown sugar, 1/3 cup sugar) and stir till fully incorporated- at this point add in egg and vanilla (1 egg, 1 teaspoon vanilla).

ADD in dry ingredients (1 cup all-purpose flour, ¼ teaspoon baking soda, ½ teaspoon baking powder, ¾ teaspoon salt).

TO FINISH:

TRADITIONAL brookies are layered, so feel free to pour into prepared pan in layers. I marbled mine, to do this portion out each batter sporadically and then pat down with fingers.

 BAKE at 350 degrees Fahrenheit for 25-30 minutes till golden around the edges and toothpick inserted into the center comes out clean.
